Now not only are we huge pumpkin streusel sweet potato boat fans, now we’re wondering how we managed to waste so many years not being on the sweet potato boat boat. Brown sugar? Bacon? Ingredients

PUMPKIN STREUSEL SWEET POTATO BOATS

Method

  1. Preheat the oven to 400 F and prepare a baking sheet with tin foil.
  2. Use a fork to stab the potatoes and place them on a plate and in the microwave for 4-5 minutes and softened.
  3. Once cooked through, let cool.
  4. Cut the potatoes in half, lengthwise and scoop out the filling.
  5. Discard 2 of the skins, you will have 6 remaining skins.
  6. In a mixing bowl, stir together the sweet potato filling, butter, brown sugar, protein, cinnamon, salt and bacon pieces until combined. Fill the skins with the mixture and bake for 20-25 minutes.
  7. Meanwhile, chop the quest bar into small pieces and place them into a food processor and blend until small crumbles form.
  8. Sprinkles the crumbles over the boats immediately after removing them from the oven.
  9. Sprinkle them with cinnamon and serve.
